I always love a good "Taco Tuesday". Well, if I am being honest I love taco's every night, but most are very heavy and loaded with calories. These are NOT! So recently I have started barely eating meat. I am not to the point nor do I think I will ever be able to call myself a vegetarian. But, if I can only eat meat like once a month why not? I noticed personally that my body does better without meat. I lost 5lbs so fast and I felt better, lighter and well more rested. I truly believe in listening to your body, so if I want meat I will have it, but at this point and after a few times of watching "what the health" I will skip as best I can.
I started to no meat thing a couple months ago, but due to our IVF process I was told I needed it in my diet. Yes, I said IVF, yes that is a whole entirely different blog and yes I will share at some point. Yes, it has been hard, but again that is another blog and right now we are doing great and been blessed thus far. Now, back to these meatless delicious tacos!!! After I spoke to my doctor she was ok with me cutting out some meat, again right now I can't cut it out til after we are finished but I can cut back. So I made these roasted cauliflower tacos and a Turkey Sante Fe salad. This way it was mostly vegetarian as honestly I think I had 3 nibbles of turkey lol.
This is such an easy and healthy dish and the salad is great for parties or just a night at home! If you added Chicken to the salad that could be your main course! ROASTED CAULIFLOWER TACOS with CHIPOTLE CREAM
For the tacos -
1 medium cauliflower head cut into small pieces
2 chipotle pepers in adobe sauce (canned)
Cilantro to taste
1 med avacado
Pink salt and pepper to taste
FOR THE CHIPOTLE CREAM
7 ounces greek yogurt
1 chipotle pepper (from same can)
1 teaspoon lime juice
1 teaspoon olive oil
1 teaspoon honey
Pink salt and pepper to taste
Preheat oven to 400 and line baking sheet with Silicone Mat (this one I swear by) add cauliflower and drizzle with olive oil and chopped peppers, making sure to coat the cauliflower in the adobe sauce. Roast for 25-30 min
Blend all the Chipotle cream in a Food Processor (best i have used and yes it is worth the cost! Never has stopped working) until smooth. Taste and adjust seasoning to see if more salt, pepper or lime is needed.
Heat a pan with little olive oil and heat the flour tortillas til they puff, place on a plate and fill each tortilla with caulifower, slice of avocado, cilantro and top with spoonful of cream sauce.
SANTE FE SALAD (From Skinny Taste cookbook)
AVOCADO CREAM SAUCE
1 med avocado
1 jalapeno pepper chopped
1/4 cup reduced fat sour cream
1 1/2 tablespoons cilantro
1 tablespoon lime juice
1/4 teaspoon salt and more to taste
Pepper to taste
Place all in a food processor and blend til smooth
TURKEY BEAN FILLING
1/2 lb turkey
1/2 cup chickpeas (or black beans)
1 large tomato chopped
1 tablespoon minced garlic
1/2 teaspoon salt
1 1/4 cumin
3 tablespoon chopped onion
2 tablespoon chopped cilantro
3/4 cup frozen corn kernels
Heat skillet and add turkey and brown, add onion, beans, cilantro, tomato, garlic, cumin, salt, cover and simmer for 20 min. Uncover and add corn til heated. set aside
1/2 cup mexican cheese
1 cup tomato chopped
you can add 2 tablespoon black olives and 2 of scallions and tortilla chips but I skip those.
Chop lettuce and then add the cheese, tomato, turkey and bean filling and the avocado cream and toss. Garnish with tortilla chips and avocado.
