Cozy Soup Night

I really don't need to say much except.. MAKE THIS SOUP!!!! This is soo delicious and easy to make!!! I paired it with a simple salad and Rosmary bread I bought from Fresh Market. Here is how to get this super easy weekday dinner on a night where you just want to snuggle up and watch your favorite shows! Let me know how you all like it!



Preheat oven to 400-

What you need

1 head of cauliflower ( broken into piece)

1 small yellow onion (sliced)

1/2 tsp cumin

1/2 teaspoon corriander

3 red peppers from a jar

3 cups water

3 tablespoon miso paste

1/2  cup cashews soaked (soak for 3 hours in water, then drain when ready or boil them and when they are soft drain those)

salt and pepper to taste


Place cauliflower and onions on 2 separate baking sheets, drizzle with olive oil and sprinkle with salt and pepper and roast at 400 for 25-30 for cauliflower and 20 -25 for onions. Save a few cauliflower to top the soup with.

After they roast place them together in the Food Processor, with the other ingredients and taste with salt and pepper. Blend in the food processor til smooth or desired consistency. I personally then like to pour the soup and heat just for 5 min in a pot to warm up everything together.  This is a personal preference but I like it!

Pour in a soup bowl, top with some of the saved roasted cauliflower and drizzle with olive oil and you are all set! Told you this was easy!
